What's Cookin': Vanilla Wafers


I wanted to post about rude, over-opinionated, child hating people who can't keep their damn mouths shut (When did "You know, you can get that fixed" replace "Congratulations!" ?!? And what business is it of theirs how many children we have? We can pay for and care for every one. It's not like we're on welfare. And when did 4 become a large number?? Oops, I guess I'm posting about it...), but I'm so stupidly angry about it, how about I share this delicious recipe for Vanilla Wafers instead?

Because it really is so good. I've had the recipe bookmarked for awhile but haven't had the chance to make them. Plus it takes a stick of butter and it's hard for me to let go of my butter in big chunks. I'm so glad I did for this recipe. They taste like the boxed stuff! Only better!

The recipe I used called for vanilla seeds scraped from the bean, but I don't just have those lying around my kitchen, so I omitted them. If you can get your hands on them, it calls for 1 whole bean's worth of seeds mixed in with the butter and sugar.

Here we go!

Vanilla Wafers - Makes about 4 cups (ish)
8 Tbs (1 stick) butter, softened
1/4 tsp salt
1 C sugar
1 large egg white
1 1/2 tsp vanilla extract
1 Tbs milk
1 1/3 C AP flour
3/4 tsp baking powder

Preheat oven to 350*.
With an electric mixer cream butter, salt and sugar until light.
Beat in egg white until well incorporated, scraping sides of bowl to mix well.
Beat in extract and milk until well incorporated.
Mix together flour and baking power and add to butter mixture. Mix well.
Fill a plastic zip bag with dough and snip off the end (or use a pastry bag with a plain attachment. Zip bags are easier to clean up though - trash can!).
Pipe dough onto cookie sheets into nickle sized mounds about 1 inch apart.
Bake for 15 -20 minutes until lightly browned, rotating every 5 minutes or so for even coloring. Cool before storing. 

These were so stinking easy it seriously took me only about 10 minutes to mix it up and pipe it. I'm thinking I'll have to use these to make a Banana Cream Pie... ;)

Huh! Your recipe is completely different from the one I tried. Mine was really weird and used a lot of cornstarch, but it made perfect wafers. Yours sounds tastier. (Also, butter's the cheapest it will get right now, so time to stock up!)

People are still saying crap to you guys? Good grief. We got crap when I was pregnant with Claire, but not as bad, because it was only our third. Have a hug. *hugs*

Really someone said that to you??? That makes me so sad but that is how people are, you really do get to the point where you just laugh it off. I have wondered how to make these for so long. I am so glad you posted a recipe. I will be making these too.
Don't think to much about small minded people like that. It just shows their ignorance.

I'm so sorry that someone said that to you. I had three children two years and under, I heard lots of rude comments. An elderly neighbor use to say "Don't you people own a television," Its insulting and disappointing at the same time. Hold your head high and the heck with them. Being pregnant and raising my kids was the happiest time in my life.

Those wafer cookies look yummy. I will have to try them. As far as the comments.....really? People just never cease to amaze me. I think it's wonderful that you and your husband are living your life they way you choose to live it and let me say CONGRATULATIONS for all the rude people who don't know how to be nice. They clearly don't know what a wonderful person you are and how wonderful and well loved your children are.

I'm so sorry people feel free to make ridiculous comments to you or anyone. I have heard very hurtful comments made also to couples who haven't had any children. Amazing that some people seem to enjoy making other people feel uncomfortable and hurt. Bless you for welcoming the precious babies the Lord chooses to give you. They will be blessed indeed. It is no ones business except for you, your husband and the Lord.

If people are too ignorant to see that children are the greatest blessing... and that they are the Lord's reward... and that they are like arrows in the hand of a mighty man... don't take it personally. They crucified their Savior. They didn't recognize Him either. Just keep living your life as a Glory to the giver of these perfect little bundles and let them stew in their own wrong thinking.

Make yourself a plate of those delicious looking cookies, find a cozy chair and scoop up a blessing or two for a read aloud... all is as it should be mama.

I'm so sorry to hear those harsh words. I hear them too, though I just had our first, "oh they're so much work" "oh they're -fill in the blank" "oh you'll never have time for -fill in the blank" (I had a boss tell me I wouldn't have time to read a book for five years... in 6 months I've managed about one a month still, of course I don't watch a lot of TV).
I think you should be proud to be able to provide for a nice sized family like that... mainy of us are being hit hard by these rollercoaster economic times and can't firmly say we could afford to take care of the number of children we want and are dreaming of better times so we can!

You know... when I got pregnant with our fourth kid (did I tell you we have FOUR kids?... actually five because I lost one to a miscarriage, and every time I have to fill out a medical form I am supposed to write "5" children, which just breaks my heart all over again and makes me wonder why they care in the first place!).

Ok... where was I? Oh yes, four kids. When we got pregnant with our fourth, one of my own sisters said to me... "So are you guys just gonna keep on going and going?"

I felt just like you did here. I heard a LOT of those kinds of comments back then - until the time I told them to ... ahem.... well stick it somewhere dark. shhh.... don't tell anyone I said that... except the person I said it to... gosh, now I'm starting to feel bad!

Anyway, four is not a big number and it is heavenly, so YAY! Don't listen to those people, Meg! Listen to us blogger friends! We love you!
