What's Cookin': Russian Tea Cakes - Holiday Goodies Series


Alright, my loverlies. I have a BUNCH of cookie & goody recipes bookmarked, earmarked and tagged for the weeks to come for what I'm calling the "Holiday Goodies Series". Cookies, breads, munchies galore! I'm not sure how many I'll actually get to (grocery budget permitting. It's a lot of butter I need...), but here's one to start you off.

I've had this recipe waiting for awhile. I finally made them today as part of a crazy-maniacal bake-fest. Verdict? Delicious! Light and airy, sweet but not too so, and perfect for a light afternoon snack or pick-me-up. They have a light almond flavor which I think is wonderful. They are on the dry side, which Ben wasn't fond of, but if you think of them in the sense that you would actually be having them with tea (or milk, or hot chocolate, or coffee, etc.) then they are perfect.

It's such an easy recipe, with few ingredients and minimal time. No fancy stuff. Just mix and bake!


Russian Tea Cookies
1 C butter, softened
1 tsp almond extract
6 Tbs confectioner's (powdered) sugar
2 C flour
1/3 C confectioner's sugar

Heat the oven to 350 degrees and line two cookie sheets with parchment paper.

Combine flour and 6 tablespoons of sugar in a bowl and mix together. Cream together butter and almond extract until smooth. Slowly add the flour and sugar mixture until fully combined.

Roll dough into 1 inch balls and place 1 inch apart on cookie sheets. Bake for 12 minutes. Dust with the rest of the sugar after they have cooled completely.

Ooh, those look tasty! Almost like this one vanilla wafer recipe I tried once, only those didn't puff up.

I'll bet they'd be good with a bit of glaze on top, right after they come out of the oven. :-)
